BESS testing provides a measurable before-and-after comparison of edge performance and is included with the Premium Waterstone Finish.

Steel type, edge geometry, and real-world use all influence how a knife should be sharpened. Hard cutting boards, dense foods, and poor surfaces can shorten edge life quickly.
Each knife is sharpened using a water-cooled Tormek system with diamond wheels. This reduces heat stress and protects steel integrity compared with faster high-heat methods.
When appropriate, edges can be refined with a 4,000-grit Japanese finishing stone for a cleaner working finish. Not every knife needs it, and recommendations are made case-by-case.
The objective is not a flashy edge that fades quickly. The objective is a stable edge profile that performs consistently in real kitchen and outdoor use.
